Greek Quinoa Salad
This is a fabulous alternative to the same old side dish or salad!

Ingredients
  • 2c cooked and chilled quinoaUse my Quinoa Base Recipe for best results!
  • 1 cucumber, peeled, seeded and diced
  • 3/4c kalamata olives, diced
  • 3/4c red, yellow and/or orange bell peppers, seeded and diced
  • 1/2c scallions, sliced
  • 1/2c celery, diced
  • 1/2tsp lemon-thyme leaves
  • 1/2c red onion, thinly sliced or diced
  • 1/3c sliced, toasted almonds
  • 1/2c crumbled goat cheeseoptional
  • 2Tbsp virgin avocado or oliveI use Chosen Foods EV avocado oil
Instructions
  1. Combine cooked, chilled quinoa, and vegetables, drizzle with oil and stir to coat. Serve chilled.
