Luscious Gluten & Dairy Free Chocolate Banana Bread
The wee monsters were asking for banana bread last week, but I’m over it so I made a chocolate version. Now I’m so mad I could kick myself. This recipe makes two loaves. It was sooooooo good that I ate one all by myself. So I made it again two days later……and I ate that extra loaf too. All by myself. Publicly. Without compunction.
So anyway, new yoga pants are expensive.
I usually don’t even crave sweets – I’d rather have a STACKED Italian sub on a 12″ roll, or a pile of crab cakes or something, but THIS….seriously, that yummers.
This version is gluten and dairy free but you can use regular dairy yogurt. You can also substitute regular wheat flour for the gluten free mix, but if you do I recommend Einkorn flour. I did use Kfibre in this, and while it’s not necessary, it does provide an extra lift to the rise, and increases the nutrient profile considerably. You can check that out here and here.
On the GF mix, I make my own with superfine-ground grains because I hate the grit associated with most gluten free flour blends. But because of the Kfibre, in most recipes I’m able to leave out any gums entirely (like xanthan). In this recipe you won’t need gums anyway because of the moisture content, eggs, chia, etc. They’ll all act as binders. All ingredients are organic and non-GMO whenever possible.

- 1 c coconut sugar regular sugar is fine at this amount
- 2 eggs
- 3 overripe bananas
- 1 tsp pure vanilla extract
- 3/4 c pre-soaked chia seeds (2 Tbsp chia seeds in 3/4 c water until all absorbed)
- 3/4 c unsweetened yogurt I use plain coconut yogurt
- 2 c gluten free flour or - BETTER - 1 ½ c GF flour, plus ½ c Kfibre - see notes above about Einkorn flour as well
- 1/4 c cacao or cocoa
- 3/4 tsp cinnamon
- 1 1/2 tsp baking soda
- 1/2 tsp real salt
- 1 c chopped pecans
- 1 1/4 c dark chocolate chips I use diary free

- Combine the flour, Kfibre (if using), cacao, cinnamon, baking soda and salt. Set aside.
- In a mixing bowl combine sugar, eggs, bananas, vanilla, chia, and yogurt. Beat on medium speed until combined and relatively smooth. Don't worry about the chunks of bananas unless you're OCD. In that case, I can't help you.
- Add flour mixture to the wet ingredients and beat until combined.
- Add nuts and 1 cup chocolate chips by hand and pour the batter (it's pretty thick) into parchment lined bread pans. Sprinkle remaining chocolate chips over the top. You can use greased pans, I just hate doing dishes. And laundry, but that's another post. #OverIt
- Call children to come lick the beater. If you're really lucky you have more than one child and they'll start fighting over said beater. Drink a mimosa, heavy on the champagne, and point out that you also have a bowl with leftover batter. If you have more than two children, might I suggest you tell no one, drink the mimosa anyway and lick the beater and bowl yourself. In fact, eat one of the loaves and tell them this recipe only made one. You're welcome.
- Bake for 45-50 minutes at 350°. It's doubtful a toothpick will come out clean because of the melted chocolate chips, but the bread should be firm and bounce back if you press on it lightly. It will also have beautiful fissures running through the top.
- Let loaves cool in the pan for 5 minutes before removing to a cooling rack. And remember to eat one yourself before your tribe finds out there's an extra.
