Sometime in the 70s my mom discovered taco seasoning in an envelope and we all loved the flavor it lent to many Mexican dishes. For whatever reason, this cheap little packet became the flavor-benchmark. However, as an adult it became suspect in my eyes as the dangers of pesticides came to light. Chiles are not exempt.
Years ago I tried numerous recipes trying to find the perfect blend, but I kept finding weird ingredients…who puts cloves or anise in tacos??? Some were better than others but I couldn’t find anything that mimicked that hallowed flavor that came from an envelope also containing dubious ingredients. One day I just figured it out, and it’s become a pantry staple, and it’s the perfect spice blend for Mexican Cordon Bleu!
One quarter cup is equivalent to a package of taco seasoning so I always make a larger amount (recipe) to have it on hand. When you’re making tacos, you’ll cook your meat, and when it’s finished, add 2/3 cup of water and 1/4 cup of the seasoning blend. Bring it to a boil then reduce to a simmer until it’s reduced.

Organic Taco Seasoning
Taco seasoning without the added preservatives! 1/4 c is equal to one packet of standard taco mix you find in stores.
8tspreal salt, finei.e. Himalayan or Redmond's Real
Instructions
Measure out all ingredients onto a sheet of parchment placed in a bowl or deep measuring cup. Whisk to thoroughly combine. Fold up opposite sides of the parchment and slip the spice blend into a dry, clean container.
1/4 c = one packet of standard taco mix
